Frozen Strawberry Pie

Ingredients :

Filling:

2 cups frozen strawberries

1 (14-oz) can sweetened condensed coconut milk

1/4 cup lime juice or 1/2 cup lemon juice

1 (8-oz) container frozen non-dairy whipped topping, thawed

1/2 tsp vanilla extract

Pinch salt

1 Gram Cracker Pie crust


Topping:

1/2 cup Quick super easy fruit jam, Recipe link here (Also, make sure you use strawberries).

Several Strawberries, Sliced



Directions:

  1. In a food processor puree the strawberries until smooth.

  2. In a large bowl, mix strawberry mixture with sweetened condensed coconut milk, lime juice and whipped topping until smooth and fully incorporated. Pour into pie crust. Cover with plastic wrap and freeze for at least 4-6 hours, or until needed.

  3. When ready, Spread Frozen Fruit Jam on top of frozen pie, and place strawberries on top. Slice Into pieces, and Serve!

Note: You don’t have to always have the topping on top of the pie. You can eat your pie plain, too. It is just as good! Also, this pie can be frozen for up to a year!
