Rice Pancakes

Prep. Time: 20 mins.

Cook Time: 35-40 mins.

Allergens: soy (non-soy options available)

Ingredients

Mix:

1 to 1-1/2 cups leftover cooked rice, white or brown (mashed with fork or potato masher)

2 cups white or whole wheat flour, or half of each

1/2 teaspoon salt

1 teaspoon baking soda (optional)

Add and mix:

2 cups soy yogurt or sour soy (soy or any plant-based milk with a little lemon juice to curdle it)

2 ripe bananas

Directions

Fry in a lightly greased pan or griddle till golden brown on both sides. Leftovers can be frozen. This is a great way to use up leftover rice.
