Vegan Banana Bread

Ingredients

In a large bowl, mix till smooth:

  • ¾ - 1cup vegan sugar (more for a dessert, less for breakfast)

  • 3 cups mashed ripe bananas (6 medium)

  • 1 (try less or sub w/ applesauce) cup refined coconut oil, melted

  • 2 tsp vanilla

Then add:

  • ½ cup unsweetened vanilla almond milk or soymilk

  • 2 tsp Apple Cider Vinegar

In a separate bowl, combine and mix with the banana mixture till just moistened:

  • 4 cups all-purpose flour

  • 1.5 teaspoon baking soda

  • 1 tsp salt

Stir in:

  • 1 cup chopped walnuts (optional)


Directions

  • Heat oven to 350° F. Grease two bread pans.

  • Follow directions from ingredients section, then pour into pans.

  • Bake 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean and crack in top of loaf appears dry. Cool 10 minutes. Remove loaves from pans, and cool. When cool, wrap bread in plastic wrap, and store in refrigerator.
